The Scottish summer can be a little unpredictable, but when the sun does finally emerge we like to take our creamy vodka and swap it in for the white rum in a classic Mojito. We call this concoction Billy’s Mojo, and it’s delicious – give it a try…
Muddle lime wedges, brown sugar, and mint leaves in a Highball glass. (Careful not to crush the mint too hard – doing so releases more of the leaves’ tannins and can make your drink bitter)
Fill with cubed ice and add 50ml Puffing Billy Steam Vodka
Stir & top with Soda Water
Garnish with fresh mint leaves
